Thanksgiving 2013 | Eating, Traveling and Painting

We had a quiet Thanksgiving which was nice. I kept wanting more people to join us or something but in the end it was exactly what we needed. We hosted and my mom, Jessica and Nathan joined us for the day.

The day before I did as much prep work as I could – put together my sweet potatoes and rolls, made my pecan pie. I also put the salt rub on the bird. William even helped a bit which he loves to do. The dinner rolls I make can also be made into cinnamon rolls so I did one recipe but only made half into dinner rolls so we could have a few cinnamon rolls while we watched the parade. They are the best!

William helped me roll out the dough and spread it with butter, cinnamon and sugar. He loved to sample whatever he could as well.

Thursday morning I was up early to finish up the turkey and get it into the oven. I had to cook the bacon for the Brussels Sprouts and bake the cinnamon rolls before it was ready to go in. Funny story….I don’t have a pan big enough for an 18 pound turkey so I bought a foil pan. It should have worked fine but I put a metal rack in it to set the bird on. When I went to put it in the oven the “feet” on the rack put a hole in my pan and the 2 cups of chicken broth in the pan ended up in my oven. Ugh! I managed to get it back out and the broth didn’t make too big a mess but now I was without a pan. I called my mom and she stopped in at Randall’s on her way over for another pan. She saved the day! We ended up eating a little later than planned but I was just glad it wasn’t a bigger disaster.

I was really looking forward to watching the parade with William even though he was bouncing around the room and didn’t sit still much. A few of the balloons and shows caught his eye though. He really liked the Sesame Street float.

Ta-daaa! This turkey was really good, I loved the salt rub recipe. Basting it with lemon juice and olive oil kept it moist and gave it a pretty color.

I made a trip to Target on Wednesday to buy flowers for the table but I couldn’t bring myself to pay $10-15 for those small bunches they sell so I came back home and put together the table with what I found around the house. A remnant of material I use to use at bridal shows created a runner. A small cake stand topped with oranges and surrounded by a couple pumpkins and candles. Then my favorite brass candlesticks and an orange, vintage mug filled with ajuga from the back yard. I loved the touch of purple! So I didn’t spend a thing on it and I loved the results.

Mom made a pumpkin, cream cheese pie from Paula Deen and I made a chocolate chip bourbon pecan pie. I didn’t get a photo of my sister’s peach cobbler but it was tasty too!

There was corn pudding, sweet potatoes, mashed potatoes, Brussels Sprouts, gravy, stuffing and three kinds of cranberry sauce! So much food and all of it was so good! I ate really slow to enjoy every bite.

William napped during the first part of our meal and then joined us for some oranges and dinner rolls.

During our meal, I asked everyone to share something they were thankful for that wasn’t expected. Like, something other than the normal things we always say. It was a little harder to come up with something but I liked what was shared. James is grateful for technology that keeps families connected over long distances and I am thankful that I can stay at home with William. 

There was some playing and napping and football watching during the course of the day. Jessica, mom and I played Scrabble which was a lot of fun. I hadn’t played in a while. I love that game! Jessica won but it was a close game. Next time, sister!

 
Friday morning we slept in (praise the Lord!) and then got ready to leave for Castroville. We wanted to spend some time with Adriana, Matt and Maria and I was also doing family photos for Matt’s family. The weather warmed up a bit so it was a nice day to travel and take photos. Jessica and Nathan came for the day too.

Even after a day of fun and lots of playing, William had a pretty rough night and wouldn’t go to sleep. Our plan was to come home Saturday but we ended up leaving Castroville at midnight. I am glad it’s not that far and we were able to get him back in his own bed. It’s usually a guessing game when it comes to him and sleeping in different places. The last time we visited them he did great. Oh well.

Since we had our whole Saturday with no plans we decided to do some yard clean up and paint our half bath. I was impressed with how much we were able to do! I love productive days and now our yard looks better and we finally got rid of the yellow. Only took us 4 years…the new color is a greenish gray called Olivewood.

William was our supervisor when he wasn’t busy climbing the step ladder.

It’s been a busy few days so I am looking forward to a lazier Sunday with my boys. I hope everyone had a relaxing and family filled Thanksgiving as well. I am so grateful for my family and all the time we are able to spend together. Now, we can get things ready for Christmas!

Menu | Week of 11.25.2013 {Thanksgiving}

It’s been a couple weeks since I did a menu post. This week is kind of important though with Thanksgiving just a few days away. One of the best holidays of the year. Last year we went to San Antonio but this year we are hosting. There will just be a few of us so kind of laid back and quiet. I can’t wait to watch the parade with William! I think he’ll love it.

I am only going to plan through Thursday this week because we’ll have leftovers and I like to make soup from the turkey carcass.

Wednesday | It’ll be my prep day so dinner will be easy….eggs or something like that.

Thursday | Thanksgiving!
I think I am going to try this recipe for the turkey. I made Brussels Sprouts with Bacon for Christmas last year and they were a hit. A friend emailed me a recipe years ago for Emeril Legasse’s Sweet Potato Pudding and I’ve made it so many times. It’s so easy and really good. In addition to this Pecan Pie, I’ll also make a small batch of James’ favorite rolls. My mom and sister are contributing with a couple other side dishes and dessert too so I am sure we’ll have plenty of leftovers.

Some Thanksgiving memories from 2008…

Kitchen Creative | Turkey and Spaghetti Squash Casserole

The plan was to make the spaghetti squash with maybe turkey meatballs. I was running behind and didn’t have time to cook the squash in the oven (nor did I really want to turn on the oven) so I tried a new method I found online. The gal microwaved the squash for 10-15 minutes. I thought great! That’s easy. Well, I may have left mine too long. When spaghetti squash is over cooked it’s mush and not very noodle like. So, I had to change gears and come up with something else.

Step 1, drain squash. I only used half a squash for this recipe. I then mixed it with salt, pepper and parmesan cheese. I spread it out on the bottom of the dish and then popped it in the oven for 10 minutes to “roast” it a bit. While that happened, I browned 1/2 pound of ground turkey and seasoned it up with salt, pepper, garlic and onion. Whatever Italian seasoning you like works.

I had some leftover roasted cauliflower in the fridge so I added that to the meat once it was cooked. Then finished it off with some roasted red pepper sauce. Let that simmer for a bit. I had a bit of Manchego in the fridge so I shaved that into the sauce right before pouring it all over the spaghetti squash. And because I love Panko bread crumbs, I mixed some with parmesan for a crunchy topping.

Into the oven at 350 for 10 minutes and voila. Dinner.

It was pretty tasty and the leftovers were even good. If you don’t have the cauliflower add another veggie or not. It’s pretty easy to change it up. Enjoy!

Menu | Week of 09.30.2013 and Pumpkins!

Monday | I love making Mondays fish days. There is something about eating the fish the same day you buy it. If it sits in the fridge a day or two, I am so not interested in eating it still. I also like to keep Mondays easy after going to the grocery store and running errands – my usual Monday routine. Salmon with veggies.

Tuesday | Easy Roasted Lemon Chicken with tomatoes and potatoes – I’ll do a half recipe of this and use the thighs I have in the freezer.

Wednesday | This looks really delicious and I like having a vegetarian meal at least once a week. I hope the boys like it too! Pesto Gnocchi. I’ll make this easier and buy ready made gnocchi and pesto.

Thursday | Fat Almond Pancake and eggs

Friday | Turkey Meatballs with Polenta

Saturday | Sweet Berry Farms – Pick your own sunflowers and zinnias! Explore the maze, make a scarecrow, take a hay ride. Lunch will be eaten out, maybe at Bluebonnet Cafe so I’ll keep dinner easy. Maybe a frozen pizza or chicken salad.

Sunday | Crockpot Zucchini Lasagna – easy to throw together before or after church!

My Thoughts on eMeals

I recently subscribed to three months of eMeals. A friend told me about it and at the time, it was exactly what I needed. A week of meals emailed to me with a grocery list. Quick and easy. They have many different meal plans but I went with their Clean Eating option.

For the first couple of months, we really enjoyed it. The meals were tasty, easy to prepare and healthy. I briefly tried their Low Carb option as well as their Natural and Organic (which didn’t seem to be much of either) but preferred the Clean Eating.

It’s a great service but I cancelled my subscription. Of the menu they sent each week, I maybe used 3 or 4 out of the 7 meals. Some of them were things we wouldn’t enjoy and I don’t cook curry at home. There seemed to be a lot of curry dishes…I felt like some of the meals were not meals but side dishes. I also ended up having to doctor a few of them because they had no flavor. Clean Eating does not have to equal boring.

This was one of the dishes I made last week – a zucchini frittata. Their idea was good but I jazzed it up with more fresh herbs. I also wish I hadn’t cooked them in the ramekin like they suggested. A muffin tin would have been better. We scrubbed those things for a week! For sides, I did sausage links and a fruit salad topped with agave, lemon juice and fresh mint.

This was a quinoa dish with chicken, peas, asparagus and mint. I cooked the chicken on the side instead and left out the peas because I didn’t have any. It was very fresh and pretty good.

One meal was a risotto. No meat, that was it. The risotto was really good and I was pretty proud of myself for my first ever attempt. But as an entree? It would not have been enough for us. I made it a side and cooked up some salmon as well. A lovely pairing.

Another meal were turkey sliders. Fun idea that I turned into my take on the Magic ‘Shroom Burger from Hopdoddy minus the “shroom”. These were really good!

In conclusion, eMeals is a great idea and service. They recently launched an app and a menu of crockpot meals. You can also add on lunch and breakfast menus. I definitely appreciated it for getting me out of my menu/grocery list rut but will be going back to my old menu making ways (Pinterest and Clean Eating Magazine).
