Menu | Week of 9.8.2014

I recently switched my grocery store day back to Monday. For a long time I was doing Tuesday or Wednesdays. I like Mondays better. It just makes more sense to go on the first day of the week and start “fresh”. Right?

I had the idea to plan some crockpot freezer meals for after the baby arrives. At least a week’s worth if nothing else. Then I thought, well maybe I should test some before then to make sure I like the recipes. So, a few of those are making it on the menu this week due to a busy schedule. 

Monday | Quinoa Chicken Parmesan

Tuesday | Calabacitas Enchiladas

Wednesday | Chinese Beef and Broccoli with noodles (find GF option – rice?) (Crockpot)

Thursday | Hawaiian Chicken with rice (Crockpot)

Friday | Leftovers

Saturday | Chicken Salad

Sunday | Eggs and Hash

Nesting is in full force around here! I am ready to get things cleaned out and reorganized before little man #2 arrives! Just 14 weeks and 5 days left! Unless he comes a bit early which is totally fine by me. Also, we are going to attempt some potty training with William…he’s already very interested and excited about using his potty. Fingers crossed!

I am almost afraid to put this out there but I think the morning (all day) sickness is finally over! The past few days have been much better and my energy doesn’t seem as low. Fingers crossed I can resume normal eating habits.

Menu | Week of 5.27.2014

The first trimester of this pregnancy hit harder than I remember with William. It also hit menu planning hard too. Meaning, there wasn’t any. Most nights I had to force myself to make dinner for my guys. Other nights, I would be so looking forward to dinner only to eat and then feel sick afterwards. Not a fun routine at all. Since week 12 hit last week, I am willing myself to kick the sickness and get back “real” life with less couch time for me and PBS Kids for William.

Lack of menu planning results in a poorly constructed grocery list that leads to budget creep. You know, it’s kind of like scope creep in web or design work. Clients want more than what you originally discussed for the same price. A bad grocery list at HEB results in buying more food than our budget allows. I sound cool, talking about scope creep, right? Haha! You can thank James for that one…..

Oh, hi there blog. Nothing amazing with this post. Just a menu….something I haven’t done in weeks. Sadly, that means we’ve been eating a lot of eggs and mac n’cheese for dinner. Sigh. My sister’s baby shower is this Saturday so I am blaming that a bit. I’ve been a little preoccupied lately. Also, I have been on Instagram like crazy selling stuff. Our fridge is still full of Thanksgiving leftovers and I currently have the turkey carcass on my stove, simmering away for soup. I think we are burnt out on the leftovers though so I need to get creative with them because I hate throwing food away. The turkey broth and meat will make a delicious and simple noodle soup. James’ favorite this time of year and with the cold weather coming again this week it’ll be just right.

Menu | Week of 11.25.2013 {Thanksgiving}

It’s been a couple weeks since I did a menu post. This week is kind of important though with Thanksgiving just a few days away. One of the best holidays of the year. Last year we went to San Antonio but this year we are hosting. There will just be a few of us so kind of laid back and quiet. I can’t wait to watch the parade with William! I think he’ll love it.

I am only going to plan through Thursday this week because we’ll have leftovers and I like to make soup from the turkey carcass.

Wednesday | It’ll be my prep day so dinner will be easy….eggs or something like that.

Thursday | Thanksgiving!
I think I am going to try this recipe for the turkey. I made Brussels Sprouts with Bacon for Christmas last year and they were a hit. A friend emailed me a recipe years ago for Emeril Legasse’s Sweet Potato Pudding and I’ve made it so many times. It’s so easy and really good. In addition to this Pecan Pie, I’ll also make a small batch of James’ favorite rolls. My mom and sister are contributing with a couple other side dishes and dessert too so I am sure we’ll have plenty of leftovers.

Turkey Meatballs and Gnocchi

I am not sure why I create menus. They seem to be more like general ideas or guidelines than anything else. This recipe for example is a merger of two separate items I had on the menu. We were going to have pesto gnocchi one night and turkey meatballs over polenta another. What happened really is that, I didn’t have as much pesto as I thought I did and the polenta didn’t make it home with us.

Now, I am not sure if meatballs and gnocchi is an acceptable combination or not (maybe if my SIL sees this, she can confirm or deny) but it was pretty good! Too bad William wouldn’t eat any of it….you can see the toddler version of this meal below. Cute, no? I would have eaten it.

I am so excited about this week! William and I are going to try out a toddler’s music class on Tuesday, Grandma comes home (we may be desperate for a date night) and I have my final round of Mini Sessions on Saturday. Looks like we’ll have beautiful weather too.

And I need to find more recipes that will allow me to use this….I haven’t yet!
