Mid Week Menu | 02.19.2014

Oh, hi there blog. Nothing amazing with this post. Just a menu….something I haven’t done in weeks. Sadly, that means we’ve been eating a lot of eggs and mac n’cheese for dinner. Sigh. My sister’s baby shower is this Saturday so I am blaming that a bit. I’ve been a little preoccupied lately. Also, I have been on Instagram like crazy selling stuff. Come check out my shops: @tinybusiness and @thenewestwrinkle_tx

Thursday | Shrimp and Tomatoes over Soft Polenta

Friday | Build Your Own Nachos

Saturday | Leftovers/Fend for yourself day 🙂

Sunday | Skillet Pasta & Beef Dinner

Monday | The World’s Best Chicken

Tuesday | Slow Cooker Teriyaki Chicken

Menu | Week of 12.2.2013

Our fridge is still full of Thanksgiving leftovers and I currently have the turkey carcass on my stove, simmering away for soup. I think we are burnt out on the leftovers though so I need to get creative with them because I hate throwing food away. The turkey broth and meat will make a delicious and simple noodle soup. James’ favorite this time of year and with the cold weather coming again this week it’ll be just right.

Monday | Thanksgiving Leftovers?

Tuesday | Shrimp and Vegetable Paella from Clean Eating Magazine Nov/Dec 2013

Wednesday | Sausage and Veggie Roast

Thursday | Crustless Zucchini Enchilada Quiche

Friday | Turkey Noodle Soup

Saturday | Spicy Sausage Pasta

Sunday | Leftover soup

I think I’ll use this recipe for my remaining sweet potatoes.

Do ya’ll have any creative recipes for Thanksgiving leftovers?

Recipe Reviews | Shrimp and Sauce

I’ve been a lot better at posting my weekly menus on here than I thought I would be. It’s actually really great that I can quickly access it and all the recipes on my phone. Since I usually have a whole week of recipes that aren’t my own I want to get better at doing short reviews of the recipes after I try them. I know I probably won’t do it all the time but maybe it’ll be helpful to anyone thinking about trying them out. Kind of like those sites that have Pinterest fails.

Roasted Lemon Garlic Shrimp

On a scale of 1 to 10, I give this a 7. It was super easy, satisfying and pretty tasty. I am drawn to recipes that use fresh thyme because my plant is out of control. I served this on a bed of couscous. I think pasta would be better.

Slow Cooker Pasta Sauce

No photo for you but that’s ok. I wasn’t super impressed with this one. Yes, it was easy but taste wise, only a 3. There wasn’t any depth. It was just tomato sauce. The eggplant and sausage were definitely the saviors. I probably won’t be making this again. I have this other recipe for sauce that is amazing. I don’t remember where I got it but I’ll have to post it here one day. I think the fennel makes it amazing.
