Menu | Week of 09.09.2013

It’s hard to make a menu and think about food and cooking when you’re fighting a bit of a cold. All you want to do is sit on the couch, buried in a blanket and read a book. Oh, a cup of tea would be nice too. That doesn’t happen anymore when your 18 month old had the cold on Thursday and got over it by Friday. The same day James and I woke up with sore throats. Let’s just say our weekend has been pretty low key. Thankfully, William has been a trooper. He’s taken to chilling on the couch with us like a pro…well, until this evening that is. I think he has finally had enough rest time. I hope tomorrow starts a better week, a healthy week for all of us.

Oh, is it too early for soups, chili and stew every night?

Last week was rough and uninspired when it came to meal times, even with a menu. This does not make me excited to plan the week ahead. Maybe I should hire a chef. Yes, that’s what I’ll do….in my dreams.

Menu | Week of 08.19.2013

I am still dealing with vacation brain and can’t believe it’s already August 19. Last week at the beach was perfect and so much fun. Getting a break from serious meal planning and having help with making meals (easy meals) was a nice break. We did hot dogs, sausage wraps and sandwiches on the beach for lunches. Dinner was either pork tacos, pizza or more sausage wraps. All very much “vacation” food. Time to get back to our regular “diet”.

James’ sister is coming for a visit! It’ll be a fun week!

Since William and I went to the Children’s Museum instead of HEB this morning, the fridge was a bit empty. James took us to dinner which made this mama happy. No dinner to cook!

I don’t usually plan a Sunday meal. If I do, I never end up making it. We may end up eating out or with family or using up leftovers. Eating breakfast all day is a lovely option too.

I actually have a week ahead of me with nothing on the calendar. It gives me a feeling of almost anything is possible. I like that. 

Monday | Roasted Salmon with veggies

Tuesday | Chicken Fingers with Mac n’ Cheese

Wednesday | Pancakes and Eggs

Thursday | Baked Chicken Stacks

Friday | Quesadillas filled with peppers, onions, squash, tomatoes and cheese

Saturday | We’ll be out and about so will keep it simple or have leftovers

Sunday | Family Brunch- Slow Cooker Sausage Breakfast Casserole, Cinnamon Rolls, fresh fruit, coffee and Mimosas




Menu | Week of 07.08.2013

Monday | No trip to HEB but it worked out ok since it was James’ birthday. He and I went to South Congress Cafe. We shared duck confit tostadas, James had scallops and I went for the beef milanesa with a crawfish gravy. They have a great atmosphere, good service and delicious food.

Tuesday | My sister and her husband are coming for dinner. They leave tomorrow for their overseas adventure! We’ll be eating later than usual so I want to keep it light. I think it’ll be a salmon dish with some mashed potatoes and a salad.

Wednesday | Quinoa Patties with a fried egg and simple salad

Thursday | I have a photo shoot at Zilker so I think roasting some chicken before I leave will be easy for the boys to handle on their own. Since I didn’t roast chicken this past Sunday, I’ll ‘steal’ it for this day.

Friday | Sausage and Veggie Toss

Saturday | Lunch – Mozzarella Grilled Cheese Sandwiches
And for dinner we’ll be with friends.

Sunday | Our Sunday is going to be weird, James may be helping a friend move all day so I will probably stick with sandwiches or something easy like leftovers or beans and rice.

Menu | Week of 06.09.2013

This is a very exciting week for us – James’ parents are coming for a visit! They haven’t seen William (other than FaceTime) since last October. He is quite a different boy…and way more active.

This weeks menu will be small because I know we’ll probably eat out a couple times while they are here (because what else do you do in Austin with out of towners?).

Buttermilk Roast Chicken with Crash Hot Potatoes and maybe some fresh green beans

Crockpot Zucchini Lasagna (because it was so good last week!) and salad

The past couple weeks have been bad. Well, I’ve been bad. No menus, incomplete grocery lists and spending too much. Not this week. I need to get back on track. My goal for this week is healthy and easy. Quick is also important because when William is hungry he can be a bear so I’ll be pulling out the crock pot more too.
