Menu | Week of 5.27.2014

The first trimester of this pregnancy hit harder than I remember with William. It also hit menu planning hard too. Meaning, there wasn’t any. Most nights I had to force myself to make dinner for my guys. Other nights, I would be so looking forward to dinner only to eat and then feel sick afterwards. Not a fun routine at all. Since week 12 hit last week, I am willing myself to kick the sickness and get back “real” life with less couch time for me and PBS Kids for William.

Lack of menu planning results in a poorly constructed grocery list that leads to budget creep. You know, it’s kind of like scope creep in web or design work. Clients want more than what you originally discussed for the same price. A bad grocery list at HEB results in buying more food than our budget allows. I sound cool, talking about scope creep, right? Haha! You can thank James for that one…..

Oh, hi there blog. Nothing amazing with this post. Just a menu….something I haven’t done in weeks. Sadly, that means we’ve been eating a lot of eggs and mac n’cheese for dinner. Sigh. My sister’s baby shower is this Saturday so I am blaming that a bit. I’ve been a little preoccupied lately. Also, I have been on Instagram like crazy selling stuff. Menu | Week of 12.2.2013

Our fridge is still full of Thanksgiving leftovers and I currently have the turkey carcass on my stove, simmering away for soup. I think we are burnt out on the leftovers though so I need to get creative with them because I hate throwing food away. The turkey broth and meat will make a delicious and simple noodle soup. James’ favorite this time of year and with the cold weather coming again this week it’ll be just right.

Menu | Week of 11.25.2013 {Thanksgiving}

It’s been a couple weeks since I did a menu post. This week is kind of important though with Thanksgiving just a few days away. One of the best holidays of the year. Last year we went to San Antonio but this year we are hosting. There will just be a few of us so kind of laid back and quiet. I can’t wait to watch the parade with William! I think he’ll love it.

I am only going to plan through Thursday this week because we’ll have leftovers and I like to make soup from the turkey carcass. 

Monday | Salmon with Kale

Tuesday | Ravioli and Salad

Wednesday | It’ll be my prep day so dinner will be easy….eggs or something like that.

Thursday | Thanksgiving!
I think I am going to try this recipe for the turkey. I made Brussels Sprouts with Bacon for Christmas last year and they were a hit. A friend emailed me a recipe years ago for Emeril Legasse’s Sweet Potato Pudding and I’ve made it so many times. It’s so easy and really good. In addition to this Pecan Pie, I’ll also make a small batch of James’ favorite rolls. My mom and sister are contributing with a couple other side dishes and dessert too so I am sure we’ll have plenty of leftovers.

I am so excited about this week! William and I are going to try out a toddler’s music class on Tuesday, Grandma comes home (we may be desperate for a date night) and I have my final round of Mini Sessions on Saturday. Looks like we’ll have beautiful weather too.

Menu | Week of 10.14.2013 and Trader Joe’s

I almost jumped back on another meal planning program. I was so uninspired this morning while making our menu and grocery list. Nothing sounded good and I was tired with the same old, same old. The rainy weather was also making me dread a grocery trip with little man in tow. Thankfully he did really well and it only rained while we were inside. Whew!

Monday | Herb Crusted Salmon Basa – I fully intended to get salmon for tonight’s recipe but when I got to the fish counter and asked for my usual (12 oz of salmon with the skin removed), the guy behind the counter seemed stumped. He wasn’t the usual “fish guy” so I changed my mind. I was worried my salmon would come back mutilated.

Tuesday | I know I’ve made this a lot but I really do love how easy it is to throw together and it always tastes good. Quick Sausage Bake

Wednesday | Fat Almond Pancake

Thursday | Slow Cooker Frittata I may actually make this earlier in the week so we can eat the leftovers for breakfasts

Friday | Cheese Tortellini in Pumpkin Gorgonzola Sauce with Roasted Sweet Potatoes – sounds totally rich but oh my word, I have to try it!

Saturday | Crockpot Chili and cornbread – we are visiting a local pumpkin patch and I thought a bowl of chili would be perfect for after our adventures. The weather looks like it’ll be a bit cooler too!

Sunday | Leftovers or a frozen meal

Did you hear? There is a Trader Joe’s in Austin now (with 2 more in the works)! It opened a few weeks back and William and I went to check it out. It was a quick trip because he was sleepy but we grabbed a few fun things and some flowers. I don’t think it’ll be a weekly trip for us, maybe once or twice a month. It’s a fun change and I love all their items made with pumpkin! Need to go back and get the pumpkin butter….definitely worth a trip!

Monday | I love making Mondays fish days. There is something about eating the fish the same day you buy it. If it sits in the fridge a day or two, I am so not interested in eating it still. I also like to keep Mondays easy after going to the grocery store and running errands – my usual Monday routine. Salmon with veggies.

Tuesday | Easy Roasted Lemon Chicken with tomatoes and potatoes – I’ll do a half recipe of this and use the thighs I have in the freezer.

Wednesday | This looks really delicious and I like having a vegetarian meal at least once a week. I hope the boys like it too! Pesto Gnocchi. I’ll make this easier and buy ready made gnocchi and pesto.

Thursday | Fat Almond Pancake and eggs

Friday | Turkey Meatballs with Polenta

Saturday | Sweet Berry Farms – Pick your own sunflowers and zinnias! Explore the maze, make a scarecrow, take a hay ride. Lunch will be eaten out, maybe at Bluebonnet Cafe so I’ll keep dinner easy. Maybe a frozen pizza or chicken salad.

Sunday | Crockpot Zucchini Lasagna – easy to throw together before or after church!

It’s going to be one of those weeks that will keep me hopping. There is a lot on the schedule. That’s ok though, last week was pretty slow and sickly.

Monday | Praise the Lord! I didn’t have to cook. We had dinner at Mom’s house.

Tuesday | James came to the rescue with BBQ for dinner. William and I spent the day snuggling since he had a fever after his vaccines yesterday. It looks like it’s only a 24 hour thing because he is a bit more active this evening.

Wednesday | Salmon and veggies with rice

Thursday | Pan Roasted Chicken with mashed potatoes

Friday | Avocado Breakfast Casserole for mama/baby play date and one for dinner too! Yes, it’s that good.

Saturday | Slow Cooker Chicken Stew with Sausage, White Beans and Spinach

Sunday | Leftovers….keep it simple!
